Vinification / aging

Fermentation in whole bunches for a fortnight. Maturation lasts 14 to 18 months in 15th century bastion with a moderate amount of new barrels.

History

Chanson was founded in 1750 and is one of the most famous houses in Burgundy. The winery is located in a bastion with 8-metre-thick walls built as a watchtower at the beginning of the 16th century, nicknamed "La Tour des Filles" and today dedicated to the ageing of the house wines. Known to lovers of great Burgundy wines, the Chanson estate offers confidential cuvées that brilliantly reveal the expression of the greatest wine villages of the Côte de Beaune.

Terroir

The Chanson estate owns a 4.3 hectare parcel of the mythical Clos des Mouches and grows Pinot Noir on 2.5 hectares. Clos des Mouches is situated on clay-limestone-marl soils and is one of the great wines of Beaune . Close to the Premiers Crus of Pommard, Clos des Mouches benefits from a superb southeast-facing site that gives the wines that sunny and generous character.
