Vinification / aging

The vinification of this wine is done by open mash fermentation in vats. He then stays for 12 months in a large wooden barrel. Before bottling, only a coarse filtration takes place, no finig.

"Fresh from the press, still slightly warm from the fermentation, the young wine in my glass shines gloomy and impetuous. Joyful and fearful at the same time I fever the first sip. All the hardships of the past year, all mishaps and indescribable hours in the vineyard are forgotten, the new wine is born. " The one-woman business is more than just a source of income for her. He is a fascinating and precious challenge that challenges her every day. The deep respect for the earth, the winds, the rain and the sun. They all play hand in hand in invisible harmony. The oak-wood microclimate allows the grapes a long growing season and a good degree of ripeness. His merit is rounded, fruity wines. The natural management (IP) and the renunciation of artificial fertilizers promotes soil vitality and gives the wines a good aging potential.

The soil consists of weathered rock, limestone and schist.
