Fresh, clear bouquet, honey, almonds, light biscuit notes, elegant chalk tone. Fresh on the palate, vibrant, wonderfully precise, straightforward, punchy and very multi-faceted. A radiant, mineral-dominated champagne.

Vinification / aging

Since 2004, barrels have been used to ripen the wines; today, 1/3 of the wines mature in oak. Before bottling, the wines are lightly filtered, but neither polished nor cold macerated. After the second fermentation, the wines of Doquet mature in comparison to other winemakers relatively long on the yeast. Even the simple Blanc de Blancs will be released after three years, the vintage Le Mesnil and Le Mont Aimé mature for seven or more years.

History

Although Pascal Doquet did not establish his winery until 2004, he has had experience in winemaking since 1982 - under his direction since 1995 - at his family's vineyard, Doquet-Jeanmaire. Today, all the grapes come from the vineyards of his family winery, but since 2003 no wines are produced under the name of Doquet-Jeanmaire.

Since 1995, when Pascal Doquet took over the family business, the company continuously switched to organic winegrowing. The plots are spread over different single vineyards with different soils in Champagne: Côtes des Blancs, Mesnli -sur-Oger, Vertus and Bergères-les-Vertus, Le Mont Aimée, Bassuet and Bassu. The soil ranges from chalky, loamy, flint to sandy. 13 hectares includes the winery, the majority are planted with Chardonnay, in addition to a little Pinot Noir.
