This cuvee reveals a delicate aroma that leads to an elegant bouquet of subtle notes of red berries and citrus fruits. Its particular style of wine making gives this cuvée a light, elegant taste, followed by a fresh raspberry flavored finish.
Vinification takes place in stainless steel tanks. 40% reserve wines. Aged on yeast for 36 months.
In 1818, the Maison Billecart-Salmon was founded by the marriage of Nicolas François Billecart and Elisabeth Salmon. Subsequently, Nicolas François joined with Louis Salmon, the brother of his wife. In 1900 Billecart-Salmon participated in the World Exhibition in Paris. Billecart-Salmon was one of the sponsors of the famous "Palais du Champagne", founded by the "Syndicat du Commerce des Vins de Champagne", in which Billecart-Salmon Champagne was served, along with all the other famous champagne brands. In 1958, Jean, the eldest son of Charles Roland-Billecart, initiated a revolution in the quality of champagne. Inspired by the traditional brewing methods, he introduced a longer fermentation at lower temperature and finally a cold settling during the winemaking in tanks. This technique preserves the freshness and finesse characteristic of Billecart-Salmon wines. In 1993, François, the eldest son of Jean Roland-Billecart, took over a chess amateur and a fine strategist, the head of the house. He started a radical change for the house by repurchasing the champagne stocks from supermarkets. This was a key decision to reposition the brand and direct sales to independent retailers and hospitality businesses. In 2018, the champagne house looks back on 200 years of independence. For seven generations, through innovation and a constant pursuit of perfection, the house has achieved what we can enjoy today in the glass.
