Explosive nose of grapefruit; fine evolution of matter. The wine lengthens with a dynamic tension.
This wine knows no wood. It is aged for one year, two-thirds in stainless steel tanks and the rest in concrete eggs. No yeast, no chaptalisation, no acidification. Bottled without fining or filtration.
This cuvée comes from several plots around the village of Courgis and represents about 100 hl of annual production on an area of just over 2 ha. The three main sites are "Les Menardes", "Pattes Loup" and "Les Malentes". The latter comprises 125 ares of old vines planted by Thomas's grandfather in 1951, from a mass selection.
