Our producer: Domaine Paul Pillot
The domaine started producing wine four generations ago. Paul Pillot renewed the domaine from 1968 by buying various 1er Crus in Chassagne and adding them to the already existing property in Chassagne, St. Aubin and Santenay.
The siblings Thierry and Chrystelle Pillot took over the domain from their father Paul and are now responsible for around 13 hectares of vineyards, mainly in Chassagne, of which 2/3 of the vines are white. The Pillots are organic, but not certified. The use of herbicides and insecticides in particular is absolutely taboo.
Thierry describes the house style as "classic", i.e. the wines should as far as possible express the differences between the locations and the vintages. The use of new barrels is limited to an average of 20%, only La Romanée receives 30%.
