This cuvée is created by blending wines from DOCG vineyards located on the hills around Erbusco, around 85% based on a vintage and the rest with reserve wines. The average production in the vineyard is 85 quintals per hectare with a share of 50% in winemaking (50 liters of wine for every quintal of grapes). The Blanc de Blancs is the most representative product of Franciacorta Cavalleri, because it underlines and perfectly expresses the philosophy of the company, in which the Chardonnay shows great elegance, finesse and surprising ability to develop. 85% fermentation in steel and in large oak barrels for the remaining 15%. After a healthy biodynamic breeze has been blowing over the Cavalleri vineyards for several years, it was decided to introduce 15% fermentation with indigenous yeasts in the base wines. Maturation on the lees for at least 2 years.
