In cement tanks, the blend undergoes spontaneous fermentation at controlled temperatures before maturing for eight to ten months in conical French oak vats. The unfiltered, vegan wine can be stored until 2028 and beyond.
Elena Celli and Luca D'Attoma found a vineyard with great potential in 2000 - a hill abandoned many years ago at 250-300 m above sea level near Riparbella, which - surrounded by woods and scrubland - offers a view of the Mediterranean. The 12-hectare site in the hinterland of the Tuscan coast has been cultivated according to biodynamic principles from the beginning and provides ideal conditions for the international grape varieties Cabernet Franc, Syrah, Merlot and Grenache. The winery produces six wines with the protected designation of origin "Costa Toscana". Star oenologist Luca D'Attoma knows exactly what he is doing: he has been working as a wine consultant since 2001 and owns more than 20 wineries all over Italy, but especially in Tuscany.
The vines, laid out as if in a natural amphitheatre, grow on excellent clay and stone soils. The low fertility of these soils leads to great characteristics and complexity in terms of the fruit of the grapes.
