The strong member of the Burgundy family grows here in Heiligacker and Weisstorkel. Pinot gris often tends to be too alcoholic and full. We try to expand it minerally and richly.
Spontaneous fermentation in barriques. Aging for 6 months in used barriques.

In the cellar we do not change the given character of the grapes. We ferment almost exclusively with wild yeast. Apart from a little sulfur, we do not use any other additives.

The wines rest on their own yeasts in wooden barrels or steel tanks. Our idea is to make authentic wines full of character. We implement this consistently by perceiving and observing the natural processes in viticulture, but hardly influencing them."
